Out of the Woods-ONG


Here is the view from the ferry between Orcas Island and Anacortes. We had a wonderful time at the Woodsong festival. Yesterday we got the chance to swim and go cliff jumping at Cascade Lake at Moran state park.

Tragedy strikes South East Kansas

Girard coach Crespino dies at 45On Friday Morning tragedy struck South East Kansas. Craig Crespino was electrocuted to death as he was moving a goal post to the Girard Trojans practice field. The goal post came into contact with a power line. Lord we pray that you will allow the family and friends of Craig to be aware of your presence and be able to mourn his loss while celebrating his life.

Woodsong Folk Festival 2006

Tara and I are planning on going to our 2nd annual Woodsong Folk Festival on Orcas Island this weekend. We can't wait to hear some good music and go camping!

Melitzanes me Feta

Tara and I made some baked eggplant with feta and it was wonderful! The ingredients all complemented each other and created an amazing taste sensation.

Melitzanes me Feta: Baked Eggplant with Feta Cheese

In Greek: μελιτζάνες με φέτα, pronounced meh-leed-ZAH-nes meh FEH-tah

The classic combination of eggplant, tomato, and herbs is enhanced by the addition of feta cheese to create a delicious meatless appetizer or main dish.

INGREDIENTS:

  • 2 pounds of eggplants (long slender type)
  • olive oil for frying
  • 5 tablespoons of fresh chopped basil
  • 5 cloves of garlic, minced
  • 1 pound of ripe tomatoes, diced
  • 1/2 pound of feta cheese, crumbled
  • sea salt
  • freshly ground black pepper

PREPARATION:

Wash the eggplants and remove stems. Cut lengthwise into 1/2 inch slices. Fry lightly (until soft and gently browned) in 1/4 inch of oil.

Preheat the oven to 355F (180C).

Layer the eggplant in the bottom of a baking dish.

Combine the tomatoes, salt and pepper to taste, basil, and garlic in a bowl, and spoon the mixture over the eggplant. Top with feta cheese, and bake at 355F (180C) for 45 minutes.

Serve hot or cold.

Just another day at the beach!

Here is what the sky looked like last night at the Folk festival. It is amazing to think that we live here!

Julio, Lisa and I were at the beach the last couple days to sell water, diet coke, gatorade and snickers for the Vancouver Folk Festival. We sold all of our drinks. The snickers didn't sell as well as we would of liked. But it was a Good lesson for future events. Last night we got to hear the band Feist play for a little while.

The Wailin' Jennys

Tara and I saw this group on some TV show last month. Today I saw that their newest album was the #1 seller on itunes. It is a fun album. The name of the group is the Wailin' Jennys and their newest album is Firecracker. Check it out!

The Giving Van


My 1990 Dodge Grand Caravan has acted as my giving tree found in the story The Giving Tree. I had to retire it at 279,000 miles. After sitting for two years it fired right up with a jump start. I can't even count the number of trips we went on between Memphis, TN and Kansas City. It is now helping someone else out. Thanks Bard dog for letting me have your "party wagon". It has been a great help and blessing.

I watched Larry King Live inside San Quentin and was intersted to hear from the prisoners there. Larry ended the show by saying his conversation with the prisoners brings a 4 letter word into his mind....h-o-p-e!

I am currently taking a class from Charles Ringma entitled Building Christian Communities. Yesterday we watched and discussed the movie Witness. The movie was an excellent example of two communities that seem to be very different. However, both the police/ urban and the Amish/ Rural communities contain elements of darkness and light.

Sun Run, Is that with sun?

THE SUN RUN

These days, Caleb and I like to pretend that we are runners. Since winter break, we have been 'trying' to do some form of exercise every day. We have been running on the trails by the Fraser River and enjoy running in Pacific Spirit Park. We may participate in the annual 10k Vancouver Sun Run. This would be an accomplishment in and of itself, seeing that I, Tara, have never started nor completed any sort of formal race. Nothing sounds more appealing than running on top of 47,000 other people in the downtown streets of Vancouver! :)
I would rather do some sort of race that would raise money for cancer versus a fundraiser that will help people to be able to read.

One of the classiest baseball players to ever play the game died today.

My all time favorite baseball player Kirby Puckett died today March 6 at the age of 45.
I grew up watching him play baseball the way it was meant to be played.

snow shoe new year

I haven't updated since LAST YEAR!!!

It is time to give you a little insight to the great Northwest.

It has basically been raining everyday since my last post up here...

Tara and I got to spend 3 WEEKS in Kansas. It was wonderful. Great time with Fam and friends, great food, and lots of disc golf and watching football.

Here is a couple of pictures of last weekend when we got to go with our friends Peter and Krista up to Mt. Seymour. Tara's first time and my first time in Canada.
